5 Diamond Chef Stéphane Roth uses fresh, locally produced organic ingredients in his cuisine. Signature dishes include succulent organic chicken which is lightly maple smoked and then roasted on the rotisserie, aged organic beef with peppery green alder sauce, homemade organic pork sausages, homemade chicken liver mousse, delicious vegetarian couscous and organic Québec cheeses. Everything is made in-house, from the organic spelt buns to the sauces, mayonnaise, ketchup, and desserts, including the mouthwatering "not to be missed" daily crème brulée. Acclaimed pastry chef Deborah Venant reinvents famous Quebec desserts using honey from the their rooftop beehives and organic Québec maple syrup. During the summer and harvest seasons, vegetables and herbs grown on the hotel's roof are featured in the restaurant's dishes.
